Chicken Ghee Roast

First of all, let me be very clear. This is NOT THE AUTHENTIC RECIPE of this delicious dish. Since I have been getting a lot of requests for this recipe, I wanted to give it a try. Now, on to some background. As I have mentioned before, my brother is a big foodie. He lives in Bangalore and he knows a lot about restaurants and their specialty there. I sometimes wonder how he gathers all the information....

Chiroti/phenori

Revisiting the recipe Chiroti is made in special occasions at our native, but we prepared it whenever we wanted. These are liked by people who are not very fond of sweets and also by sweet lovers. These days people have stopped making them at home because of the work involved. These are readily available in shops at our place. But I prefer home made chirotis. We call this dish Chiroti, it is also called Phenori....

Garlic Flavored Pizza

V and I love pizzas. We like to eat them once in a while at Pizza Hut. But I get a real urge to make my own pizzas sometimes. Recently, I was watching the show Emeril Live and it was a pizza special episode. I thought of giving the pizza base a try. I did a small addition. I added 1 tea spn fried garlic to the base. I wasn’t sure it would make a big difference, but I was so surprised at the result....

Goli Baje(mangalore Bajjis)

I have no idea how this name has come. May be because of the round shape of this dish it is called “ GoLi ” and “baje ” is a deep fried dish. This is one of the most popular dishes from South Kanara (my neighbouring district). But I havn’t seen this much at my native. I tasted it few times at my college canteen. But after that I had forgotten about it....

Okra Sidedish (bhende Upkari)

Upkaris are the integral part of Konkani cuisine. We make upkaris with almost all the vegetables and they are a must in any Konkani meal. The vegetables are very lightly spiced to bring out the unique flavor of it. Bhende upkari is one such dish loved by all. Okra(bhende) is cooked in very minimum spices and then garnished with fresh coconut. When I was a kid, my granddad used to grow a lot of vegetables in out garden....

Quesadilla And Peach

Now, the authenticity police may beat me down for this recipe here. This is not a authentic recipe, but inspired by my Mexican favorites. Quesadilla – pronounced as kisadia, is made of melted cheese between folded corn tortilla. While I try it sometimes, V does not go anywhere near this. Salsa is kind of condiment served with many Mexican dishes. We get salsas made of tomato, corn, fruit etc. I think it goes very well with Quesadilla....

Shrimp Gravy With Tomatoes

This is a simple shrimp gravy that I tried couple of months ago. My parents were here at that time and they used to take care of cooking, baby and everything else around home. I wanted to give some rest to them and so decided to cook something. This is what I came up with. This is inspired by my aayi’s sungta ambat . I wanted to give a slight different taste to it, so I used a paste of onion and tomato....

What is the first thing that comes to your mind when you think of any Konkani wedding or thread ceremony lunch? Raw mango is called ambli (Konkani) or mavinkayi (Kannada). In India, it is a mango season now. Every time I talk to my parents, they talk about mangoes in our yard.
