Our dear friend Srivalli is organizing a fund raiser to help Lakshmi, who is suffering from Coronary heart disease. It is very unnerving to know about Lakshmi who is 28 years old, mother of two, fighting for life. If we can help even in a small way, it may save a life and along with it, life of those two small kids.

Its no secret that I love easy lunchbox items. Daily morning I spend some time thinking about what to cook. This is one such item that I tried recently. I had seen this recipe in one of the TV shows back home. This rice takes some time to get used to. While I simply love this, V is not a great fan. I would definitely recommend trying it atleast once.

Ingredients: 1 cup rice 1/2 cup chopped cashews 1 tea spn sesame seeds 1 tea spn coriander seeds 1 tea spn urad dal 1 tbl spn dry coconut 3-4 red chilies 1/2 tea spn mustard seeds 5-6 curry leaves A pinch asafoetida 1-2 tea spns lemon juice Oil Salt

Method: Cook the rice taking care the grains are separate. Dry roast sesame seeds, coriander seeds, urad dal and red chilies(take care not to burn anything. You can roast them one by one if needed). Grind them to a powder along with coconut. Heat oil and add mustard seeds. When they start popping, add curry leaves, asafoetida and cashews. Fry for few minutes on a low flame. Now add the spice powder and salt. Add rice and mix well. Finally sprinkle the lemon juice and take off heat.
